Grilled Pasta Salad

A delicious pasta salad with grilled vegetables, tomatoes, and a delightful dressing.
Ingredients (for 4 servings):
- 300 g pasta (e.g., fusilli or penne)
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 150 g cherry tomatoes
- 100 g feta (cubed)
- 50 g arugula
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:

Cook the pasta
Cook the pasta according to the instructions on the package. Drain, rinse briefly with cold water, and let it cool. -
Grill the vegetables
Slice the bell peppers into strips, the zucchini into rounds, and cut the cherry tomatoes in half. Brush the vegetables with olive oil and grill them on the barbecue or grill pan until they have nice grill marks. -
Chop and mix
Let the grilled vegetables cool slightly, then cut them into bite-sized pieces. Combine them with the pasta in a large bowl. -
Make the dressing
Mix the olive oil, balsamic vinegar, oregano, salt, and pepper to make a dressing. Pour it over the pasta salad and mix well. -
Garnish and serve
Add the feta and arugula to the salad and gently toss everything together. Serve immediately or let it sit for a while to enhance the flavors.
Tip: Add some grilled chicken or shrimp to enrich the salad!
